CHOCOLATE MINT COOKIES

1 1/2 CUPS PACKED BROWN SUGAR
3/4 CUP BUTTER
2 TABLESPOONS WATER
2 CUPS SEMI-SWEET CHOCOLATE PIECES
2 EGGS
2 1/2 CUPS ALL-PURPOSE FLOUR
1 1/4 TEASPOON BAKING SODA
1/2 TEASPOON SALT
2 BOXES (6 oz EACH) CHOCOLATE CREME DE MENTHE MINTS

  1. Combine sugar, butter, and water in a medium saucepan. Heat for 4 to 5 minutes over low heat or until butter melts.
  2. Add chocolate pieces; stir until melted. Remove from heat.
  3. Pour into large mixing bowl; cool for 10 minutes.
  4. Beat in eggs one at a time at high speed. Gradually beat flour, baking soda, and salt into chocolate mixture at low speed. Cover and chill dough for 1 hour.
  5. Preheat oven 350 degrees. Shape rounded teaspoons of chilled dough into balls. Place 2 inches apart onto foil-lined cookie sheets.
  6. Bake at 350 degrees for 12 to 15 minutes or until cracked and puffy. Immediately place a chocolate mint on top of each cookies; cool on racks.
  7. Store in a tightly covered container.
