ITALIAN ROAST BEEF

4 LB BEEF RUMP ROAST
2 ONIONS
2 CLOVES GARLIC
1 LARGE STALK CELERY
2 OZ BACON
FLOUR

Trim all excess fat from roast. 
Grind 1 onion, the garlic, celery, and bacon.
 Lightly flour roast; rub with ground mixture.
 Slice remaining onion; place in crock-pot. 
Place roast on onion.
 Cover and cook on low setting for 8 to 10 hours.
