PEANUT BUTTER CHEESECAKE SQUARES

BASE

1 1/2 CUPS GRAHAM CRACKER CRUMBS
3 TABLESPOONS SUGAR
1/4 CUP BUTTER, MELTED
1 TABLESPOON MILK
FILLING
1 PACKAGE (3 OUNCES) CREAM CHEESE SOFTENED
1/4 CUP CREAMY JIF PEANUT BUTTER
1/4 CUP SUGAR
1/4 CUP MILK
1 EGG
1/2 CUP CHOPPED CHOCOLATE CHIPS
DRIZZLE
1/4 CUP SEMI-SWEET CHOCOLATE CHIPS
1 TEASPOON BUTTER

  1. Heat oben to 350 degrees.
  2. For base, combine crumbs and 3 tablespoons sugar in small bowl.
  3. Combine melted butter and one tablespoon milk.
  4. Stir into crumbs.
  5. Press lightly into 8 x 8 x 2-inch pan. Bake at 350 for 20 to 22 minutes.
  6. For filling, beat cream cheese and peanut butter in small bowl at medium speed with electric mixer until well blended.
  7. Add 1/4 cup sugar, 1/4 cup milk and egg. Beat well.
  8. Stir in chopped nuts, spread over baked crust.
  9. Return to oven for 20 to 22 minutes.
  10. For drizzle, melt chocolate chips and butter on very low heat, Stir to combine, Drizzle from end of spoon back and forth over top.
  11. Chill, cut into 2 x 2 inch squares. Cover. Store in fridge.

    1. Thank you! I started this as a virtual, semi-anonymous diary to get out all the thoughts cluttering up my mind. But after about 2 hours sitting at the keyboard, I realized I am equally as bad at writing down my emotions as I am verbalizing them out loud. Then I looked over at the stack of recipes I had scrawled on paper scraps, in notebooks, on note-cards, on magazine clippings. Then I thought I could put them on here to have them all in one place and I could finally get rid of the stacks of tattered pages taking up space all over my house.
